Recipe: Soft & Chewy Oatmeal Chocolate Chip Cookies

Ingredients
227g (1 cup) unsalted butter, softened
300g (1 cup) brown sugar
1 tsp vanilla extract
1 egg
180g (2 cups) rolled oats
1 tsp baking soda
195g (1 ½ cup) plain flour
¼ tsp salt (if desired)
180g (1 cup) semi-sweet chocolate chips
150g (1 cup) chopped nuts
Instructions
Preheat your oven to 175°C (350°F). Line a baking tray with parchment paper.
In a large bowl, beat the softened butter and brown sugar together until light and fluffy.
Mix in the vanilla extract and egg until well combined and light and fluffy.
In a separate bowl, whisk together the oats, flour, baking soda, and salt (if using).
Gradually add the dry ingredients to the wet mixture.
Fold in the chocolate chips and chopped nuts.
Scoop about 1.5 tablespoons of dough per cookie onto the prepared tray, spacing them about 5 cm (2 inches) apart.
Bake for 10-12 minutes until the edges are golden but the centres still look soft. They’ll firm up as they cool.
Let the cookies cool on the tray for 5 minutes, then transfer to a wire rack.
Top tips
For gooey centres, bake closer to 10 minutes. For crispier edges, leave them in for the full 12 minutes!
If the dough feels too soft before baking, chill it in the fridge for 15-20 minutes to prevent spreading.
Store in an airtight container for up to 7 days.
