Recipe: Christmas Banana Bread

This seasonal twist on the classic ‘ too many brown bananas in the fruit bowl’ banana bread is a welcome change with walnuts, orange and cranberries bringing some delicious Christmassy tastes! Just because it’s Christmas doesn’t mean those brown bananas aren’t going to be hiding out in the fruit bowl, so why not give this one a go and share some Christmas cheer!

Number of servings: This recipe makes one cake loaf, however, you could use smaller loaf tins and get 2-3 mini loafs, depending on the size of your tins.

Preparation and cooking time: 75 mins

Ingredients

  • 1/2 cup softened butter

  • 1 cup sugar

  • 2 large eggs, beaten

  • 1 1/2 cups flour

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 3 mashed bananas 

  • 1/2 cup sour cream

  • 1 tsp vanilla extract

  • 2 tsp fresh orange juice

  • 2 Tbsp orange zest

  • 1 cup dried sweetened cranberries

  • 1/4 cup chopped walnuts (optional)

 

Instructions

  1. Preheat the oven to 175°C and grease a 9-inch loaf pan.

  2. Cream the butter and sugar until light and fluffy. Mix in the beaten eggs.

  3. In a separate bowl, whisk together the flour, baking soda, and salt, then add this to the butter mixture.

  4. Stir in the mashed bananas, sour cream, vanilla, orange juice, and orange zest.

  5. Fold in the cranberries and walnuts.

  6. Pour the batter into the prepared pan and bake for 50-55 minutes, or until a toothpick comes out clean.

  7. Cool in the pan for 10 minutes before turning out onto a wire rack to cool completely.

Top tips

  • You can use your imagination and swap out/replace the ingredients as you like e.g. instead of using orange and cranberries you could use lemon and blueberries or if you have some other christmas flavours in mind then give them a go!

  • Add in some of your favourite christmas spices - cinnamon, ginger, cardamon ….whatever takes your fancy!
