โฃโฃAnother delicious ๐ฉ๐ฅ๐š๐ง๐ญ ๐›๐š๐ฌ๐ž๐ ๐ซ๐ž๐œ๐ข๐ฉ๐ž for you all today. When itโ€™s mango season we have this often as it is a truly flavourful meal. Chickpeas for protein and fibre, mango for sweetness, cauliflower for a happy gut and all the herbs and spicesโ€ฆ.go on have a go! โฃโฃ

๐ˆ๐๐†๐‘๐„๐ƒ๐ˆ๐„๐๐“๐’:โฃโฃ

โบ๏ธ 1 tsp curry powderโฃโฃ

โบ๏ธ 1 tsp sugarโฃโฃ

โบ๏ธ 1 ts ground mustardโฃโฃ

โบ๏ธ 1 tsp ground corianderโฃโฃ

โบ๏ธ 1/2 tsp ground turmericโฃโฃ

โบ๏ธ 1/2 tsp ground cuminโฃโฃ

โบ๏ธ 3 tablespoons olive oil more as neededโฃโฃ

โบ๏ธ 1 medium yellow onion thinly slicedโฃโฃ

โบ๏ธ 1 cup canned chickpeas drained, rinsed and warmed through slightlyโฃโฃ

โบ๏ธ 1 head of cauliflower cut into 1-inch florets, blanch for 2 minutes in boiling water and then pat dryโฃโฃ

โบ๏ธ 2 large mangoes peeled, pitted and chopped into 1/2-inch piecesโฃโฃ

โบ๏ธ 1 jalapeno stemmed, seeded and diced smallโฃโฃ

โบ๏ธ 1 cup chopped cilantroโฃโฃ

โบ๏ธ 2 tablespoons lime juiceโฃโฃ

โบ๏ธ 2 cups baby spinachโฃโฃ

โบ๏ธ 1 cup baby arugulaโฃโฃ

โบ๏ธ salt and black pepperโฃโฃ

๐Œ๐„๐“๐‡๐Ž๐ƒ:โฃโฃ

โฃโฃ๐ŸŸก Mix the curry powder, sugar, ground mustard, coriander, turmeric, cumin, 1/2 teaspoon kosher salt and 1/4 teaspoon of black pepper in a small bowl and set aside.โฃโฃ

๐ŸŸก In a large pan heat the olive oil. Add the onion and cook for about 6 minutes over high heat. Add the spice mix and turn the heat down to medium-low. Cook for another 6 minutes. Transfer to a large bowl, and add the chickpeas to the same bowl. Leave the pan over medium heat.โฃโฃ

๐ŸŸก Add the cauliflower to the same pan that cooked the onion adding more olive oil if needed. Cook until the cauliflower is coated in the remaining spice mixture and is cooked through (about 5 mins). Transfer the cauliflower to the bowl with the onion and chickpeas. Let sit at room temperature for about 20 minutes.โฃโฃ

๐ŸŸกTo the bowl, stir in the mango, jalapeno, cilantro, lime juice, spinach and arugula. Toss so that the ingredients are evenly dispersed. โฃโฃ

๐ŸŸก Adjust seasoning to taste, serve, and enjoy!
